The Bois d'Inde plant, also called Bay St Thomas, owes its name to an anecdote linked to Christopher Columbus, who thought he was in India and so named the shrub with its bewitching scent and flavour reminiscent of cinnamon, cloves and pepper. Traditionally used for its many medicinal virtues, it is particularly popular in Caribbean cooking where it is used to prepare sauces, marinades, vegetable cooking waters and grilled dishes.
