Touloulou is a small land crab native of the Caribbean. It is really easily recognizable by its red shell with black design on the back. It lives in a burrow in the mangrove, shaded by beach trees.
Traditionally we hunt those crabs a couple of months before Easter, we feed them with chillies (not too much or they will lose their claws) and bread fruits for them to be flavorful for the feast !
On Easter weekend, we'll then congregate by the beaches and share our meals.
